Another coffee from our friends the Urena family in Costa Rica.  The Villa Sarchi variety is a natural dwarf mutation of Bourbon that was discovered in Costa Rica in the '50s or '60s.  When we cupped this coffee on the farm in February it stood out strongly on the table next to the other coffees.  It is rare to find Villa Sarchi outside of Costa Rica and we have not tasted anything like this before.  It seems to be the perfect setting for this variety to grow in. 

The process is a straight forward black honey where a large amount of the mucilage is left intact and it is dried on raised beds. 

The taste is altogether unique, with a nice intensity of acidity and flavor followed by a soft milk chocolate.  This coffee is solid and has done well in competitive cuppings in the past.  We are excited to offer it!
