Within the municipality of Neiva there are 14 veredas, one of which is La Julia, known for it’s small-scale coffee cultivation. It is here that producer Carlos Ivan Castro meticulously grows his beans, of the Castillo variety, on a small, steep and fertile lot. Carlos cultivates and processes the cherries in the typical post processing system most popular throughout Colombia. First, with the help of family and a group of pickers from El Cauca, the cherries are hand selected for peak ripeness, weighed, then de-pulped and put in a cement tank lined with ceramic tiles to ferment. Beans are then washed and dried on raised beds for 12 days. The result of this labor is a delicious, juicy cup with notes of red fruits and Meyer lemon.
