This is another beautiful naturally processed coffee from our long time farmer partner Luis Alberto. This time the coffee is a Bourbon variety that is grown in Nicaragua and seems to be connected with another variety called Paraiso based on recent genetic analysis. Whatever the case may be, the taste of this variety has been consistently amazing over the years that we have purchased it. There is a nice combination of subtle floral notes and deep, chocolate based sweetness. When it is naturally processed the sweetness gets even bigger and the florality leans more toward berry notes and spices. Amazing as espresso or drip applications.
