We are so excited to have coffee again from Neja Fadil! Former pro soccer play, Neja, owns a mill in Uraga, Ethiopia that processes coffee from surrounding farms at very high altitudes. We had the opportunity to meet him and see his operation in 2020 and we were very impressed with his focus on quality and desire to treat his contributing farmers equitably. Due to issues with pricing last year he ended up selling all of his coffee to a cash buyer (which was a bummer) but this year he is back to exporting. For this coffee, Neja used a technique called double soaking to process the cherries. Basically the cherries are de-pulped and put into water to ferment. Next they are scrubbed and placed in water to ferment again and receive a second scrubbing before heading to the raised drying beds. As you might imagine this produces a "cleaner" and sweeter tasting coffee. We are blown away by the taste and think you will be as well!
