    This coffee comes from a coffee superstar! Ben Paz and his family are the owners of a coffee processing mill called San Vicente in Pena Blanca, Honduras. He has helped us make relationships with farmers like Bernardo Erazo and Alex Baide. Several years back he planted his own coffee farms and began experimenting with processing that led to a 1st place finish in the Cup of Excellence this year and a couple years back! Suffice it to say we are honored to carry his coffee and excited to share it with you.

    For this lot, he used what is referred to as anaerobic honey processing, where the cherries are picked and put in anaerobic containers overnight before being de-pulped the next day and then fermented again in tanks and placed on raised drying beds. Phew! Processing has become quite complex these days. The results are a very nice, fruit forward cup with a juicy sweetness that keeps you coming back for more.
