Sourced from his farm in Mozonte, this lot features the Catimor variety—a cultivar often overlooked in specialty coffee, but one that shines under the right conditions. A hardy cross between Caturra and the Timor Hybrid, Catimor thrives at slightly lower elevations, making it a perfect match for this farm’s altitude of 1,500 MASL.

    The secret to unlocking Catimor's potential lies in the processing. While the variety is known for its disease resistance, it can sometimes carry an herbal or astringent finish. Luis Alberto has solved this puzzle with his impeccable Natural processing. By meticulously controlling the drying phase, he has eliminated those rough edges completely. What remains is a cup that defies expectations: magnified sweetness, intense tropical fruit notes, and a finish that is clean and vibrant.
