When we created this roast profile we wanted to capture the valuable qualities of a dark roast: sugar caramelization and robust roast flavors, without losing the inherent qualities found in the coffee: body, sweetness, chocolate/fruit flavors. We achieve this by choosing the right green coffee and roasting it to a very precise roast level that's not too dark and not too light.
